Chicken Parmesan Casserole
This dish is a classic, and for good reason. It's hearty, comforting, and delicious. To make this casserole, you'll need:
- 1 pound of cooked penne pasta
- 2 cups of marinara sauce
- 1 pound of cooked, shredded chicken
- 1 cup of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh basil
Preheat your oven to 350°F. In a 9x13 inch baking dish, layer the pasta, sauce, chicken, and cheeses. Repeat until all ingredients are used up. Top with the chopped basil.
Bake for 25-30 minutes, or until bubbly and golden brown. Serve hot with garlic bread and a green salad.
Grilled Peach and Burrata Salad
This salad is light and refreshing, perfect for a summer day. To make it, you'll need:
- 4 ripe peaches, halved and pitted
- 2 tablespoons of olive oil
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of balsamic vinegar
- 4 ounces of burrata cheese
- 4 cups of arugula
Preheat your grill to medium high heat. Brush the peach halves with olive oil and season with salt and pepper. Grill for about 3-4 minutes per side, until lightly charred.
In a small saucepan, heat the balsamic vinegar over medium heat until it's reduced by half and becomes syrupy.
Arrange the arugula on a platter, and top with the grilled peaches and burrata. Drizzle with the balsamic reduction.
Enjoy this salad as a light lunch or as a side dish with grilled chicken or fish.
Caramel Apple Pie
Nothing says fall like a warm slice of apple pie. This recipe takes it up a notch with a decadent caramel sauce. Here's what you'll need:
- 1 9-inch pie crust
- 6 cups of sliced, peeled apples
- 1/2 cup of granulated sugar
- 1 tablespoon of lemon juice
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of salt
- 1/2 cup of all-purpose flour
- 1/2 cup of caramel sauce
Preheat your oven to 375°F. In a large bowl, toss the apples with the sugar, lemon juice, cinnamon, nutmeg, and salt. Add the flour and mix until the apples are coated.
Roll out the pie crust and place it in a 9-inch pie dish. Pour the apple mixture into the crust.
Drizzle the caramel sauce over the top of the apples.
Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly. Let cool for at least 30 minutes before slicing and serving.

Peanut Butter Cup Cookies
If you love peanut butter cups, you'll love these cookies. They're soft, chewy, and packed with chocolatey goodness. Here's what you'll need:
- 1/2 cup of unsalted butter, at room temperature
- 1/2 cup of creamy peanut butter
- 1/2 cup of granulated sugar
- 1/2 cup of brown sugar
- 1 egg
- 1 teaspoon of vanilla extract
- 1 1/2 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 24 miniature peanut butter cups, unwrapped
Preheat your oven to 375°F. Line a baking sheet with parchment paper.
In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla, and beat until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, and mix until just combined.
Roll the dough into balls, about 1 tablespoon each. Press a peanut butter cup into each ball of dough, until the dough completely surrounds the candy.
Place the cookie balls onto the prepared baking sheet, and bake for 10-12 minutes, or until the edges are golden brown. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Enjoy these cookies with a tall glass of cold milk.
That's all for now! I hope you enjoy these delicious recipes as much as I do.
