Tater Tot Breakfast Casserole Pioneer Woman
The Pioneer Woman is an expert in whipping up delicious and hearty dishes, and her Tater Tot Breakfast Casserole is no exception. This dish is perfect for feeding a crowd or for a cozy Sunday brunch with family and loved ones.
Ingredients:
- 1 pound breakfast sausage
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 small jalapeno pepper, seeded and finely chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 bag (32-ounce) Tater Tots
- 2 cups grated cheddar cheese
- 8 large eggs
- 2 cups milk
- 1/4 cup chopped chives
Start by browning the breakfast sausage over medium-high heat, breaking it up into small pieces as it cooks. Once the sausage is cooked through and no longer pink, remove from the pan and set aside. In the same pan, sauté the onion, red bell pepper, and jalapeno pepper until the vegetables are tender and translucent. Add the cooked sausage back into the pan along with salt, black pepper, and cayenne pepper. Mix well and remove from heat.
Preheat the oven to 350°F. Grease a 9x13 inch casserole dish with cooking spray. Spread half of the Tater Tots in the bottom of the dish in a single layer. Top with the sausage mixture and then sprinkle half of the grated cheddar cheese on top. Layer the remaining Tater Tots over the cheese and top with the remaining cheese.
In a large mixing bowl, whisk together eggs, milk, and chopped chives. Pour the egg mixture over the Tater Tot and sausage layers, making sure to cover the entire dish evenly.
Bake the casserole in the preheated oven for 45 minutes to 1 hour, or until the top is golden brown and the eggs are set. Remove from the oven and let cool for a few minutes before serving. Garnish with additional chopped chives, if desired.
